Product Description
After selective harvesting in several stages according to the ripeness of the grapes, the berries were lightly crushed in the cellar and left in their juice for 6 hours to achieve better aroma extraction. This extract-rich Chardonnay & Weissburgunder was spontaneously fermented with natural yeasts and stored on the full yeast for about 10 months until the end of July 2022. The yeast was stirred up every month (batonage process) to give this wine even more fullness and creaminess. The expansion took place in 500l tonneau wooden barrels and traditional oak barrels with a new wood content of approx. 30%.ABV 12.5%

The kind of structure you expect from a good white Burgundy. Lovely harmony at the silky finish. The first vintage of this wine. A cuvee of 55% chardonnay and 45% Weissburgunder that was matured for 9 months sur lie. From organically grown grapes. Drink or hold.
